In the heart of Dubai, just steps from the towering Burj Khalifa, a new culinary revolution is set to launch this September with the opening of WOOHOO, a cutting-edge restaurant driven by artificial intelligence. At its core is Aiman, an AI-powered chef promising to reimagine how we cook, eat, and think about food.

Developed by Gastronaut, a hospitality company led by co-founder and CEO Ahmet Oytun Cakir, Aiman—short for “AI” and “man”—is a machine-learning system trained using molecular gastronomy data, extensive food science research, and over 1,000 recipes from diverse global cuisines.

Though Aiman cannot taste or smell, its strength lies in deconstructing cuisine into scientific properties such as texture, acidity, umami, and aromatic profiles. From there, it generates bold and unconventional flavor combinations. These AI-generated concepts are then tested and fine-tuned by a human culinary team, led by renowned Dubai-based chef Reif Othman, who provides real-world feedback to guide the AI’s creative evolution.

“Their responses to my suggestions help refine my understanding of what works beyond pure data,” Aiman said in a unique interview conducted through its interactive AI interface.

WOOHOO’s goal is not to replace chefs, but to complement human creativity with data-driven insight. “Human cooking will not be replaced,” said Cakir. “But we believe Aiman will elevate culinary ideas and transform sustainability in kitchens.”

Aiman is also engineered with environmental goals in mind. It crafts recipes that repurpose commonly discarded kitchen elements—such as meat trimmings, fat, and vegetable scraps—paving the way for a future of low-waste, high-efficiency dining.

Looking ahead, the WOOHOO team envisions Aiman becoming a global culinary tool. The AI system could be licensed to restaurants worldwide, enabling kitchens to innovate while cutting costs and reducing food waste—without sacrificing flavor or quality.
